Ingredients:2 slices of whole wheat sourdough bread1 ripe avocado1 tsp lemon juiceSalt, to tastePepper, to tasteToppings - cherry tomatoes, pomegranate seeds, chilli oil, half a chopped onion, maple syrup Method:Toast the bread on a grill pan. Cut the avocado in half, remove the pit, and scoop out the flesh in a bowl. Use a fork to mash the avocado to your desired consistency. Season with salt, pepper and a tsp of lime juice.Spread the mashed avocado on the toasted bread.
