Avocado toast

This has always been one of my favourite go-to breakfast recipes. Comes together in under 10 mins!

Ingredients:

  • 2 slices of whole wheat sourdough bread

  • 1 ripe avocado

  • 1 tsp lemon juice

  • Salt, to taste

  • Pepper, to taste

  • Toppings - cherry tomatoes, pomegranate seeds, chilli oil, half a chopped onion, maple syrup

Method:

  • Toast the bread on a grill pan. Cut the avocado in half, remove the pit, and scoop out the flesh in a bowl. Use a fork to mash the avocado to your desired consistency. Season with salt, pepper and a tsp of lime juice.

  • Spread the mashed avocado on the toasted bread. Add all the toppings and consume immediately while the bread is warm and crispy.

  • Experiment with your choice of toppings and enjoy!
