Pickled onions

Pickled red onions aren’t just a condiment, they’re a game changer! 🔥

Ingredients:
1.5 cups vinegar

2 cups water

1 large red onion, sliced

4 slit green chillies (optional)

1 cinammon stick

1 tsp salt

1 tsp sugar

1 tsp red chilli flakes

Method:

  • In a saucepan, boil the vinegar and water. Once boiled, add the sugar and salt and stir for 30 seconds.

  • Take a mason jar or any air tight container, add the red chilli flakes, the slit green chillies and the onions. Pour over the vinegar and water. Let this cool down before refrigerating.

  • Refrigerate for 12-24 hours before consuming. You’ll see the onions turn reddish pink, this is when you’ll know they’re ready to consume. Serve these with salads, curries or on toast.
