Broccoli soup

Broccoli soup is a warm hug in a bowl. Packed with nourishing goodness and a velvety texture, it's the perfect blend of health and flavour to uplift your spirits on any day.

Ingredients:
1 tablespoon olive oil

1 medium onion

chopped

2 cloves garlic minced

1 cup broccoli florets

2 cups of vegetable stock

1 cup lite cream or coconut milk for a vegan option

Salt and pepper to taste

Optional garnishes:

Toasted slivered almonds, a drizzle of olive oil, chilli flakes

Method:

  • Start by chopping your onion, mincing the garlic, and cutting the broccoli into florets. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent and fragrant, about 3-5 minutes.

  • Add the broccoli florets to the pot, stirring to combine with the onion and garlic. Cook for about 2 minutes.

  • Pour the vegetable broth into the pot, ensuring the broccoli is fully submerged. Increase the heat to bring the mixture to a boil, then reduce the heat to simmer. Cover and let it simmer until the broccoli is tender, about 10-15 minutes.

  • Once the broccoli is tender, use an immersion blender to blend the soup directly in the pot until smooth. Alternatively, you can carefully transfer the soup to a blender, blend in batches, and then return it to the pot. Stir in the lite cream or coconut milk, and continue to cook for an additional few minutes until the soup is heated through. Season with salt and pepper to taste.

  • Ladle the soup into bowls and garnish with toasted slivered almonds, a drizzle of olive oil, chilli flakes and pepper.
