Vodka Pasta

Came across this banger of a recipe on YouTube. Played around with it and made probably one of the best pastas I’ve ever made in my life!

Ingredients:
300 grams whole wheat pasta of choice
1/4 cup olive oil
3-4 cloves of garlic, minced
4 small shallots, diced
1/2 cup tomato paste
1/2 cup heavy cream
1 tablespoon vodka (optional)
1 teaspoon red pepper flakes
1/2 cup pasta water
1 cup parmesan cheese, grated (optional)
Salt and pepper to taste
Chilli oil, chives and toasted pine nuts for garnish

Method:

  • Cook the pasta according to the package instructions. Reserve 1/2 cup of pasta water before draining.

  • In a large pan, heat the olive oil over medium heat. Sauté the garlic and shallot until soft. Add the tomato paste and cook until it appears darker and caramelized. Pour in the heavy cream and vodka. Cook until the alcohol evaporates. Add the red pepper flakes and oregano. Pour in the pasta water and add the cooked pasta to the sauce. Toss until the pasta is evenly coated.

  • Garnish with chilli oil, toasted pine nuts and chives. You’ll come back for seconds. GUARANTEED.
